San Daniele del Friuli is in the Italian region of Friuli-Venezia Giulia on the border of Slovenia and is known for its superior cured hams. Prosciutti from San Daniele are pressed to give them their characteristic, elongated shape. It was in Friuli where San Daniele ham found the ideal environment and the best micro-climatic conditions to become an Italian culinary wealth. The Celts, the first "salters" figured out that this was the perfect place to cure hams with the low humidity, excellent ventilation, and pre-Alpine hillside climate. The Romans carried on the techniques of the Celts and, today, this tradition is protected with DOP status (Protected Designation of Origin).

Campania is colatura di alici. Its roots date back to ancient Rome where it was known as garum. The deep brown elixir is made by hand, using only anchovies and salt, and without adding any preservatives. Colatura is the liquid obtained during the 12-month anchovy curing process. The resulting extract is then aged for three to four years in oak wood barrels before being filtered and bottled. Colatura is rich with the flavors of the sea and of high-quality anchovies. It is an umami powerhouse and one of our secret weapon ingredients—a few drops have the ability to completely transform a dish. Colatura is a versatile ingredient and it can be used with pasta, fish, meats, vegetables and bruschette. It is important not to add any salt to the recipe and we suggest adding Colatura little by little until the desired flavor is obtained.

Dried, salted Tuna (Mojama) is salted yellowfin tuna. With its unmistakable flavor, Yellowfin tuna loin, is a Spanish hidden treasure. Mojama is most commonly found in the southern provinces of Spain, where the hot temperatures mix with a dry, windy climate to create the ideal circumstances for its production. After being meticulously cleaned, loins of fresh tuna are stacked and smothered in sea salts for two days. After being washed for up to twelve hours in bins with fresh running water, the tuna is hung out to dry in the sun, slowly aging for an average minimum of 21 days. When this process is complete, the tuna will have lost half of its weight. The salt and coastal breezes help to turn its flesh luscious, firm, and deep-reddish brown in color.
