These solid dark chocolate spheres deliver powerful chocolate taste and a superb, smooth texture. Use in baked goods such as pancakes, cookies, muffins and brownies or cold preparations such as ice cream or mousse as an ingredient or a garnish.
This 70% dark chocolate is made from a blend of cacaos from the region of Esmeraldas in Ecuador and the Piura and San Martin regions in Peru. We paired the fruitiness of the Peruvian beans with the toasty notes of the Ecuadorian Cacao Arriba, balancing acidity with bitterness. This combination has final notes of dried fruits and sweet spices. This is a very workable chocolate, easy to use in every pastry application, highly fluid and suitable for enrobing.
